Bio Chantal Véchambre

Chantal Véchambre, originally from Paris, is a chef certified in both French cuisine and Pastry-chocolate. In 2005 she moved to Acadia, Moncton, New Brunswick. There she began her own business as caterer, collaborate with fine dining restaurants and as well offering courses in French cuisine and pastry.

Her research in culinary history led her to a collaboration with the team of the Fortress
of Louisbourg (Nova Scotia), a National Historic Site of Canada. She first has worked to develop new recipes for the menus of the site’s restaurants. She after that helped to develop and present culinary workshops to the public,
inspired by the 18th century recipes.

She wrote with Anne Marie Lane Jonah, the award winning book
French Taste in Atlantic Canada, 1604-1758, A gastronomic history (CBU Press)
,
featuring ingredients and recipes of the colonial period.

Newly established in Toronto, she pursues memoirs and food writing as well cooking ventures about French cuisine : supper club, historical talks, in-home chef service, corporate and private catering,  tastings, workshops..…
